Here’s the recipe that I used (and improved with some spices)

  • 4 eggs
  • 4 medium to small carrots
  • 2 cups of flour
  • 2 cups of sugar
  • 1 cup of olive oil
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of cinnamon powder
  • 1/2 teaspoon of nutmeg powder
  • 1 spoonful worth of fresh ginger
  1. Wash, peel and chop the carrots. Start preheating the oven at 200C
  2. In a blender put the carrots, ginger, eggs and olive oil – blend until smooth.
  3. Sift the flour, sugar, baking soda and spices mixture.
  4. Combine remainder of your ingredients from the blender until it is a smooth batter.
  5. Pour mixture into your baking tin of choice (or muffin tin in this case) and pop into oven between 15-20 mins at 175C.
